The aroma of strawberry is composed of three notes: green, sweet, and sour, with green and sweet notes being dominant. Traditionally, strawberry flavorings are primarily formulated with ethyl 3-methyl-3-phenylglycidyl acid (strawberry aldehyde) and ethyl 3-phenylglycidyl acid (strawberry ester), which have a similar aroma to strawberries. The green notes are imparted by methyl heptyne carboxylate, ethyl acetoacetate, benzyl acetate, jasmine absolute, and violet leaf absolute. Its sweetness is composed of methyl cinnamate, ethyl cinnamate, rose alcohol, phenethyl alcohol, geranium oil, rose oil, α-ionone, β-ionone, maltol, ethyl maltol, vanillin, and other compounds. The sourness is derived from acetic acid, butyric acid, isobutyric acid, and other compounds. Furthermore, it is enhanced with fruity ester flavorings.
