Bananas belong to the Musaceae family, Musa genus, and Musa subgenus. Bananas are low in water and high in calories, containing protein, fat, starch, pectin, and abundant carbohydrates (>20%), vitamins A, B, B6, C, E, and P, as well as minerals such as calcium, phosphorus, iron, magnesium, and potassium.
Bananas are a superior fruit from southern China, known for their rich aroma and sweet taste. Common varieties include the Plum Blossom Banana, the Plantain, and the Fire Banana, with the Plum Blossom Banana considered to have the best aroma. Panama bananas are also produced internationally; they are larger, but their taste and flavor are not as good as those from my country. Banana flavoring formulations often use ethyl acetate, isoamyl acetate, and isoamyl butyrate as the main flavorings to mimic the aroma of bananas, supplemented with orange oil to enhance natural freshness. Clove oil and vanillin are often used as a base for long-lasting fragrance.
